As its my first post in this forum so lets share some dessert as its a symbol of happiness and joy.
This recipe is really very easy and best part is that it doesn’t require baking.
I got a very good response for this recipe and this is especially loved by kids.
280z (800g) digestive biscuits
tea biscuits 1 cup
nuts chopped walnuts/hazlenuts/pistachios/ toasted.
1 cup sugar
half cup coco powder
1 cup water
2/3 rd cup butter
1 tsp vanilla extract
CHOCOLATE GANACHE :
half cup whipping cream
120g bittersweet chocolate chopped
Break biscuits into small pieces in a large bowl.
Heat a non stick pan over medium high heat and toast walnuts for about 5 minutes, stirring frequently to toast evenly. Add toasted nuts over the biscuits.
Prepare the chocolate syrup: In a medium sauce pan , add sugar and coco powder. Stir to combine and gradually add water while stirring to combine well.Add butter and place over medium heat . Bring to boil about 7-8 minutes. Stirring constantly.Remove from heat and let it cool. Add vanilla extract. Set aside for 10-15 minutes.Pour the syrup over the biscuits and add nuts .Combine well using a spatula.
Transfer mixture into 9″ round non stick pan.Press well using back of spatula. Cover and refrigerate for 30 minutes to 1 hour before preparing chocolate ganache
Prepare Chocolate Ganache:
Place cream in a saucepan and heat till it begins to boil. Pour hot cream over the chopped chocolate and let it sit for 1 minute.Stir until smooth.Pour ganache over the chocolate biscuit cake and refrigerate to set for about 3-4 hours or overnight before serving.Decorate with toasted nuts, cut into slices and serve.
